Here are a few examples of wood that I often use and recommend:

Poplar and Cherry both have a rather smooth, clean grain, while Mahogany and Walnut have a bit more open grain.
All woods vary a bit in color, from piece to piece. So, these are just some examples.
Poplar sometimes may have a yellowish or greenish tint. Cherry is sometimes like caramel, and other times a bit more reddish, but still smooth like caramel. Mahogany usually has this somewhat speckled look - lots of variation throughout the fibers. It also is sometimes more brownish, and other times more reddish. Walnut is generally quite dark, and usually not too reddish.
Note - the spoon on the banner of this site is carved from Cherry. It's a good example of a very caramel-colored piece of Cherry.
